Earlier this year, I started eating lots of fruits and vegetables. After a few visits to the produce aisle, I decided I really enjoyed oranges, apples, cabbage, carrots and broccoli.

Okay, to be perfectly honest, I’m not nutty about broccoli. I picked this vegetable because health experts tout its nutritional value.

Each day, I juice two fuji apples and two oranges. The mixture fills a tall glass and has a delicious flavor. Sometimes, I add a little pulp. For the veggies, I purchase a bag of cole slaw mix, which contains cabbage and carrots. I top the salad with a drizzle of fat-free dressing.

If you need a bit of motivation to increase your fruit and veggie intake, consider the following story from National Public Radio:

Should I cook my veggies? I’ll do more research. For the moment, I’ll stick with my routine. It’s simply easier to rip open a bag of salad mix.
